You know how the saying goes, “New year, new you!” Blah, blah, blah. But, to jumpstart those healthy New Year’s resolutions, we’ve got the perfect salad recipe for you! This tri-tip steak salad can be made with marinated chicken too or even meatless, which would save you a lot of trouble. You could toss in black beans, tofu, or just serve as a yummy side salad.
It also has bright and juicy cherry tomatoes; crunchy, toasted almonds; fragrant scallions; salty, creamy feta; sweet and tart dried cherries; crisp red bell peppers; and an herby and tangy homemade cilantro vinaigrette with avocado oil, lemon and lime juice, vinegar, honey, cilantro, and some seasonings.
We wouldn’t call this salad “quick” as it takes some time to put together, but good things come to those who wait! Plus, it may be time consuming, but it’s pretty easy to whip up. Simply marinate the meat, blend up the vinaigrette, chop and toss together the veggies and voila! Your entree salad is ready to be served.
